By the time of the Crusades the Holy Land had been Arab for centuries. Muslims arguably started the fight by invading Europe (Spain and the Balkans), but once European Christians got a taste of victory, they didn't stop with retaking European territory; they figured they might as well keep the momentum going and go conquer the Holy Land in the name of Christ.
