I have a vaxxed/boosted family member that reported to me their vaccine status. I warned them the same thing, and also walked through the reasons why at the very least, it should never have been mandatory. When I last talked to her...following her booster, she contracted Covid and was on her second week of still being under the weather.

To your first point, my only supposition is that when I tell people like this I have had Covid twice, I believe they disbelieve I've actually had it since I wasn't vaccinated or was skeptical of a lot of the rules about it. They would probably think I was "lucky" I had not died.
