I work from home, so it's vital that I'm able to just turn the gas on, and my pan is extremely hot (like it's very hot), much hotter than those I mentioned. It's a noticeable difference.
There are things I did notice. I noticed that the manufacturer seasoning, it is a bit more difficult and takes longer to apply the "natural" seasoning from just following the additional seasoning and natural cooking process. The manufacturer seasoning is less non-stick.
I have both 10 inch and 8 inch. On my 10 inch, I noticed that when I stripped away the manufacture seasoning and have my own natural seasoning apply itself over time. My own seasoning is much more non-stick than the manufacturers, delicate eggs, omelettes, bacon, potatoes, anything delicate won't ever stick. It's actually more non-stick than teflon.
Overall, this pan is amazing. This broke my brand allegiance to other brands like De Buyer. The shape is to die for. I love the higher than normal sides but fits your standards lids.
The manufacturer claims the design you’re seeing in the video showing this type of bottom curvature is purposeful due to expansion of the steel material when in use, or as they said “totally normal”. Well it doesn’t take much research to find the OPPOSITE is true. Curvature should be slightly concave/inward against the stove as the normal position. This would make the fluids in the pan collect around the edges of the bottom like a donut and flatten when heated. This Made In pan is curved downwards and the fluids pool in the middle and is even more exaggerated when heated. The pan rocks back and forth on the cooking surface causing the fluids to generally pool toward the heavy handle side of the bottom.
The pan spins easily on the cooktop and in my opinion creates a dangerous condition. When the pan is heated this warped condition is worse. But apparently this is normal? This pan is difficult to use and produces poor results in cooking.
My advice is to look elsewhere with a different manufacturer.
Pros:
Achieves great results getting a nice crust on steaks, 10/10 for searing meats in general
If seasoned correctly it’s a Teflon free non-stick
Excellent shape with high walls
I’ve only had mine for a few weeks at the time of this review but the build quality seems very good
The only real con I can think of is that it is very heavy coupled with an awkward handle
(If you are cooking for yourself or 1 other person, I highly suggest getting a 10” or smaller)
A tip for the newbies:
Never add oil while it is cold. It will cause food to stick to the surface. Take a spoonful of water and add it to the pan to test if it’s hot enough. If it beads up and skates on the surface it’s ready for oil. This will also indicate if your pan is seasoned properly.

My only problem with it is the expected one - it sticks like an SOB, at least at first, no matter how careful you are about the cleaning and wiping with oil stages. However, 3 weeks in, today it did give me pancakes not pan-pieces, so the tempering process does eventually start to take - it just takes a while.
First the pros:
- great heat distribution
- solid construction
- works very well on conduction and BBQ/Gas
- can always scrub down to steel and start seasoning again
The Cons:
- it is heavy! (will need to hands to life if anything significant in pan)
- it is not non-stick out of the box
- the handle is metal and flat, so uncomfortable in the hand. But this is how pro kitchen cookware is, because chefs use a cloth dish-towels, or similar, to pick up the pans. The flat handle prevents it rotating in the hand.
The details:
So when I first received this, I followed the directions and use some cast iron 'seasoning' oil and baked it per instructions. Turned out a mess. The oil really did not bake into the metals surface. SO I used a SS steel kitchen scrub pad, and scrubbed down to the base metal again (one of the benefits of this type of pan). This time I used grapeseed oil and put it on the BBQ with the lid closed and the temp low for a couple of hours. This turned out much better, but things still were sticking at times. From that point forward, everytime I wash it (including using SS scrubber if needed to remove residue if needed), I put on the conductive stove at level 2 (out of 9), let it dry and then wipe more grapeseed oil on with a paper towel and then let it cook for an hour or so (conductive uses very little energy, so no big deal. Could also do on gas/electric). Now, about 25-30 meals in, it is becoming close to no stick. See video with eggs. You will want to use a wood or metal or very stiff plastic spatula when cooking, so if it does start to stick (burn), then you can easily scrape it away. The soft spatulas are not good at doing this, and the sticky parts will just build up with more. You also want to use a much lower heat with this. I generally start at 8 (out of 9), get hot, add 1/2 tbls oil, and then turn down to 7/7.5 for cooking.
So while this required a bit more attention than a true 'non-stick, it will outlast all the non-stick pans you will probably buy for the rest of your life. Now, if I get too hot and something sticks, and I have to use SS scrub, I am not at square 1. The pan has retained some of its seasoning, and does not take long to get to 100%.
Just wish it was not so heavy, but then would not be as good at heat distribution.
