I thought I really knew this prior to Whole30, but now I definitely know: homemade is ALWAYS better. It just is. This one minute mayo is no exception and when it takes a minute or less of cook time, how can you not make it at home?
Not only will you be saving time and serious money (I’ll do a little calculation for you down below), but mayo will become the base of so many tasty recipes! I have made some awesome spicy mayo with this stuff and then ate it with french fries and used it for a sushi burrito.

I really love this one minute mayo as a base for other sauces. I have made garlic sauces and spicy mayos galore!
My favorite spicy mayo option is to combine 1 TBSP of this homemade mayo with 1 tsp of sriracha. That combo with crispy oven baked french fries is heaven.
Let’s talk about cost for a minute. I can get a pack of pasture raised eggs (the most expensive I buy) for $5.99 for a dozen so thats $0.50 for the egg, about $2 for the oil, $0.25 for the lemon and negligible cost for the spices, but we will call it $0.10.
That’s $2.85 for a jar of avocado oil mayo. The same amount in a store bought container is as much as $9 for a Whole30 compliant mayo.

- Measuring spoons
- Liquid measuring cup
- Wide mouth mason jar
- Immersion blender
What ingredients will I need to make this One Minute Mayo?
- Room temperature egg – the egg cannot be cold or else this recipe will not work
- Avocado oil or light olive oil – avoid using extra virgin olive to get the best flavor
- Lemon juice
- Salt
- Mustard powder
- Ground black pepper
How mayo is made in one minute
Step 1: Add ingredients to a jar
First, add all of the ingredients to a wide mouth jar. Then, place an immersion blender into the jar.
Step 2: Blend
Starting at the bottom, blend the ingredients. Slowly pull the blender up and down until all of the oil is incorporated. Finally, store in an airtight container in the fridge
How long does homemade mayo last?
The best way to determine how long your homemade mayo will last is to check the expiration date on your egg. That is the expiration date of your mayo.
Once you know that date you can take a sharpie and some tape and write the date on your jar!

One Minute Mayo
Ingredients
- 1 egg room temperature
- 1 cup avocado oil or light olive oil
- 1.5 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp ground mustard powder
Instructions
- Add all ingredients to a wide mouth jar
- Place an immersion blender into the jar
- Starting at the bottom, blend the ingredients slowly pulling the blender up and down until all of the oil is incorporated
- Store in an airtight container in the fridge
