Dark Chocolate Espresso Brownies ⤵️

Pan: 8×8, I used 8x10

Oven: 350°F

Ingredients

• 170g dark chocolate

• 1 stick butter

• 200g granulated sugar

• 55g brown sugar

• 2 eggs + 1 yolk

• 2 tsp vanilla

• 8g instant espresso powder

• 60g all-purpose flour

• 25g cocoa powder

• 1 teaspoon Diamond Crystal kosher salt

• Optional: dark chocolate chunks, walnuts, flaky salt, powdered sugar

Instructions

1. In a skillet or medium pot, melt butter + dark chocolate until smooth. It’s important you melt in the chocolate off heat; if it’s too hot it’ll clump up.

2. Whisk in espresso powder. Whisk in sugars. Rest 2 min.

4. Whisk in eggs + yolk, then vanilla.

5. Fold in flour, cocoa powder, and salt.

6. Fold in extra chocolate chunks or nuts, if using.

7. Bake at 350°F for 25–32 min.

8. Cool, slice, finish with flaky salt and powdered sugar.
