It must be acknowledged that our awareness as individuals belonging to a social system is often mediated by what’s in our plate. And very often this is a mirror of our history.

Georgian’s cuisine is a great case study.

Take the Khachapuri for example. There are several types, including the notorious boat-shaped Khachapuri Adjaruli, a symbol of abundance and pastoralism, but also an evocation of the Black Sea. The Khinkali, on the other hand, have a more mountainous soul. These dumplings, sometimes filled with a rich broth, embody the staple of the shepherds of the Caucasus.

Very distinctive, Georgian cuisine is also the product of a rich regional history, from a supposed Mongol influence carried along the Silk Road to a Persian, Turkish, and Russian connection.
