Every Sunday I take 1 hour to do the following for myself and my body:
+ roast a sheet pan full of colorful veggies
+ roast 2-3 whole sweet potatoes
+ shred up a rotissiere chicken
+ make one dressing or homemade sauce
+ wash, chop and store fresh greens or lettuce
I listen to jazz while I do this, or an audiobook.
Itâs so pleasant and supports my week ahead.
