Sure is! I do it like this (meaning I nag the wife until she does it, seeing as she's aprofessional cook):
Cleave a chicken in half lengthwise and but it on a metal grill in the oven. Slice the beets into strips (mix in carrots, potatoes and other roots veggies plus onions to your heart's content) and put it in a tray underneath the chicken.
Honey glaze the chicken as it roasts and drips chicken fat and honey on top of the veggies, stewing them in the juices.
That, I can eat until I start sweating!
