Just a little fun fact about this: I made the worst brisket of my LIFE the other night and I had to serve it and I'm still so mortified. It was LEAN and grass-fed, very cool farm, but just not the right cut for a braise. Not even a fool proof recipe can save you if the brisket is cut from the wrong end or somehow without enough fat. SOB.
