Ham + Cheese Hot Pockets

INGREDIENTS

Dough

-4 cups (500g) AP flour

-2 teaspoons (10g) kosherfine salt

-1 tablespoon (12g) sugar

-1 packet (7g) yeast (active dry or instant I don’t know the difference)

-1 1/4 cups (300g) warm water

-2 tablespoons (30g) olive oil or melted butter

Filling

-8 ounces deli ham

-8 ounces mild cheddar, shredded

Topping

-2 ounces salted butter, melted

-Flaky salt

-Poppy seeds, optional

Dough Instructions

  1. Combine dry ingredients: flour, salt, sugar, and yeast.

  2. Add warm water + oil. Mix until it becomes a rough dough.

  3. Knead (8 minutes) or stand mix (5 minutes) until smooth.

  4. Cover 1 to 1.5 hours until dough rises and doubles in size..

  5. Divide into 12 balls. Rest 10 minutes before filling.

Filling + Bake

  1. Flatten or roll each dough ball to about 4” across.

  2. Add ham + cheddar. Close + pinch to seal; place seam-side down.

  3. Cut tiny slits to vent. Brush w/ butter, salt ,and poppy seeds.

  4. Bake at 425°F for 15-18 min until golden.
