Persian herb + beef stew
Ingredients
-2lb beef chuck, cubed
-1 large onion, chopped
-1 can red kidney beans, drained
-1½ cups parsley, finely chopped
-1 cup cilantro, finely chopped
-2 tbsp dried fenugreek
-¼ cup olive oil
-1 tsp turmeric
-Salt
-2-3 dried limes (add lemon and lime juice after cooking if you don’t have these)
Steps
Sauté herbs in oil 5-10 min until toasty and fragrant. Remove.
Sauté onion, add turmeric, add beef, and salt.
Add herbs, beans, water to just cover.
Pressure cook 35 min, natural release. If you’re using a dutch oven, covered for 2.5 hours in the oven at 300F.
Adjust salt + citrus. Serve over rice.
