w/ chimichurri, horseradish aioli, + parmesan fries
Tri-Tip
Salt + black pepper. Hard sear, then finish at 350° in oven until desired temp. Rest. Slice against the grain.
Chimichurri
Parsley, shallot, garlic, hungarian wax pepper, vinegar, olive oil, salt, pepper, lemon juice, and lemon zest.
Horseradish Aioli
Mayo, sour cream, grated garlic, prepared horseradish, and salt.
Parmesan Fries
Russet potatoes, salt, parsley, and parmesan.
