seared ribeye + pasta w/ a parmesan cream sauce ⤵️
2 tbsp butter
1 small shallot, finely minced
2 cloves garlic, grated
1 tbsp flour
¾ cup whole milk
½ tsp kosher salt
½ tsp freshly cracked black pepper
½ tsp peppercorns
¾ cup freshly grated parmesan
½–¾ cup hot pasta water
12 oz pasta
in the same pan you cooked your steak, reduce heat to medium-low and add butter, shallot, and garlic. sauté until it softens and smells dank.
add flour and stir to form a roux. slowly add milk and whisk until the sauce begins to thicken.
add pepper, peppercorns, parmesan, and hot pasta water and stir. add another tablespoon of butter to make it glossy and smooth. add more salt if needed, and toss with pasta.
