Tri Tip
• 1 (2–2.5 lb) tri tip
• 2 tbsp olive oil
• Kosher salt
• Fresh cracked pepper
1. Pat dry. Rub with oil. Season heavily with salt + pepper.
2. Grill over medium-high heat, 5–7 minutes per side until internal temp hits 129°F.
3. Pull it. Let it rest 10–15 minutes.
4. Slice against the grain.
Charred Cabbage w/ Miso Vinaigrette
• 1 head green cabbage, cut into thick wedges
• Olive oil
• 2 tbsp miso paste
• 3 tbsp rice vinegar
• 2 tbsp olive oil
• Honey
• Salt
1. Brush wedges with oil. Salt well.
2. Grill cut-side down over high heat until charred and tender (5–8 minutes per side).
3. Mix miso vinaigrette ingredients, reserve a lil bit to the side, and pour the rest over cabbage.
Root Veg Purée
• 1-2 large sweet potatoes
• 2 carrots, chopped
• 2 golden beets, peeled + chopped
• 2 tbsp butter
• 1 tbsp reserved miso vinaigrette
• Salt
1. Roast veg @ 425F until tender.
2. Blend with butter and salt until smooth. Add a splash of miso vin if needed.
3. Adjust salt. It should taste slightly sweet but balanced.
