New today: a Q&A with Jason Ganahl of G-Que Barbeque in Denver.
Jason started as a KCBS judge, competed for years before winning big, and opened his first restaurant in a strip mall with little visibility and parking. A decade later, he's got five locations, stadium concessions with the Broncos and Rockies, and a debut cookbook, G-Que Barbeque, out April 7.
A few things that stood out:
— He switched from Prime to Upper 2/3 Choice brisket under cost pressure and says he hasn't missed a beat
— It took him 10 years to put a restaurant somewhere people could actually see it
— His daughter Hollie’s chocolate cake made the cut for the cookbook on top of his hit recipes
