The EVOO substitution ladder - roughly in order of impact:

🟒 Butter β†’ EVOO (biggest documented drop in mortality and cardiovascular risk)

🟒 Margarine & spreads β†’ EVOO (similar story in large US cohorts)

🟒 Mayonnaise β†’ EVOO-based dressings (same direction, meaningful effect)

🟑 High-omega-6 seed oils β†’ EVOO (helpful, but less dramatic than the butter swap)

So if your cooking oil is already olive oil but butter still shows up on toast, potatoes and vegetables, that’s probably where the remaining opportunity actually lives.
