It tastes great, you can use it for so many cooking needs, and the health benefits are outstanding. Making it the kitchen go-to oil feels like a great upgrade.
As you know, extra virgin olive oils are not all made equal. If you want the greatest health benefits, look for a single estate, early harvest, ideally from a high polyphenol cultivar (like Picual, Coratina or Koroneiki), with a peppery taste, and in a dark glass bottle. (I wrote more about choosing the best EVOO for health in a follow-up issue).
This just in! As you may know, I take both cooking and motor oils a little too seriously.
