I was craving a spring-forward salad today so whipped up a concoction of snow peas, asparagus, radish, red onion, avocado, mint, and feta, with a lemon/red wine/olive oil dressing.
I balanced it with tomatoey butter beans with oregano for extra carbs and protein.
So light, fresh, and satiating!
