Feb. 22 I planted seeds for my favorite vegetable, water spinach, 空心菜.

I planted them in hydroponics pipes. Today we harvested our first mess. (Mess refers to a meal…it is the word used in “messhall”, or in the military term “to make mess” meaning to prepare a meal.)

In 44 days the water spinach went from seeds to table.

The Department of Agriculture classifies water spinach as “a noxious weed” and tried to ban it because, without cold weather, it can spread like kudzu and clog waterways.

One very effective way to control the growth is to stir fry with red peppers and garlic.
