I've done your Apple Honey version once back during the holiday season but used a small enameled pot since I didn't have a rimmed baking sheet nor a spring form pan. Having since procured a spring form pan just last week, I will give this another go. I think I'll do it with Huckleberries since they are in season here in MT and available for the taking when mountain biking. Fingers crossed it works!
