I moved to Florence in 1984and learned about the “guts” specialties.

The famous street food is the lampredotto panino. Most stands will also have other specialities, using the various stomachs, tongue, udder and more.

Inside the Mercato Centrale is the original stand from when the market opened, 1865.

Lampredotto is the 4th stomach and more tender, perfect for a panino.
