Torta Caprese from the isle of Capri, is gluten free. Made with ground almonds and chocolate.

When I first learned to make this recipe back in the 80s, you ground the almonds and chocolate together.

Now it’s easy to buy ground almonds and the recipes change.

A few years ago, I had the lemon version with white chocolate.

The lemon version I use, from a pastry chef on the coast, uses olive oil instead of butter.

A light delicious lemon cake.
