My daughters favourite 5 ingredient oat cookies

A bonus ‘screen swap‘ idea

This usually makes 16-18 decent sized cookies.

They are super tasty, super simple, and full of fibre and protein.

200g of rolled oats

75g ground almonds

120g of coconut oil

120ml of maple syrup

100 dark chocolate (or any left over chocolate from Easter works too!)

Blitz 100g of the oats into a fine powder with a food processor (this helps make the cookies gooey).

Mix with the rolled oats and ground almonds.

Melt coconut oil for 15sec in microwave and mix with maple syrup. Add to the dry ingredients and mix to combine.

Create small balls with the dough and press lightly on to a baking sheet (You can use the bottom of a small glass to make them neater, but I like the rough and ready look of them).

Bake for 15min at 180c

Meanwhile, melt the chocolate either in a microwave for 30 sec (give it a stir after 15min) or over a ‘Bain Marie’ (i.e. in a heat proof bowl over a swimming pot of water)

Cookies are ready when they look golden round the edges.

Once cooled, dip into the chocolate and place back on the baking sheet.

It takes 10-15min for the chocolate to get firm (Or if you are impatient like my children stick them in the fridge for 5min)
