Fittingly, considering I just wrote about hospitality this week, we had an impromptu guest yesterday (who happens to be gluten free). While we are not a gluten free family, I keep a tried-and-true (and super easy!) 4-ingredient GF peanut butter cookie recipe on hand for just such an occasion. This afternoon visit turned into an extra supper guest. I had to change up the meal plan to accommodate, and went with another go-to favorite: garlic scape pesto stuffed chicken breasts (fast, crowd-pleaser). It’s always good to have a few recipes in your arsenal that you can rely on for these last-minute occasions. It makes room to be able to enjoy the company without the stress.
