After seeing Victoria Belim delicious syrniki breakfast today in Kyiv Stories Cafe - I thought I should post the syrniki which the wonderful young chef there, Vadym Gerbut, made for me last month. He manages to do his military service in Kyiv and work at the cafe on his days off, along with taking care of his young family. He is incredibly talented! He loves to do popups and collabs with other cafes when he finds time (I don’t know how he finds it but he still sometimes does!)

He made me some of his savoury syrniki with smoked trout and flying fish roe and it was superb.
