Whipped Butter & Radish Tower 🫜🧈. I saw the idea of a giant butter tower in Copenhaguen, they just set it out for people to help themselves and I loved it. The obvious pairing for me was radishes with a little salty chive surprise inside! Love the contrast of the soft butter, cold & crisp radish with the flaky salt!

Ingredients:

  • 8 oz room temp unsalted butter.

  • 3 tbsp heavy cream.

  • 1 lemon (zest).

  • 1/4 cup chives.

  • Flaky salt to taste.

  • 6-8 french radishes.

Directions:

  1. Add the butter, heavy cream and lemon zest to a bowl and whip until fluffy and soft. About 5 min.

  2. Shave your radishes thin and pat dry.

  3. Add a bit of the butter to a plate, add chives, flaky salt, repeat 3-4 times.

  4. Arrange the radishes on it. Serve with toasted ciabatta.
