Ideas for ingredients to prep here: grain of choice (rice, quinoa, farro etc.), roasted veg of choice (carrots, broccoli, the sky is the limit), fresh green of choice, fresh chopped veg of choice (radishes, carrots, celery all work great), and then here is the kicker: prep a sauce! Sesame peanut sauce, pesto, and hummus are all great. And having a well stocked condiments selection will also take you far (mustards, soy sauce, hot sauces, etc. etc. etc) This formula will lead you to some really quick delicious lunches!
