Amaranth is very nutritious, versatile in the kitchen and fun to grow in the garden. Both the leaves and the seeds are edible and highly nutritious I gathered over 11 pounds of seed from our self-sown Hopi Red plants this year (and used the leaves in a wide array of recipes such as the Minestrone recipe I shared in august and more recently in a pumpkin soup I made more recently).
Even a small handful of Amaranth seeds could create over one thousand plants and perhaps cultivate an acre (if one was companion planting with something like the three sisters system). That handful of seeds (if tended with love and purpose) could produce over one thousand pounds of seed the following year.
Amaranth is an important ‘ancient grain’ because it is gluten-free and contains about twice the crude protein of wheat, rice, and maize and is high in fiber (8%), lysine, iron, magnesium, and calcium.
On top of all that, Hopi Red Amaranth (foliage and seeds) contains high concentrations of anthocyanin (which is a compound that offers it’s own extensive range of health benefits).
Goji Seeds have Immense potential within them to produce nutrient dense food and medicine for many years. Each seed contains within it the potential to produce hundreds of pounds of Goji Berries in the vine’s lifetime. If some of those berries are used to save seed and those seeds are shared, the abundance that becomes accessible in one’s local community within only a few short years is exponential.
