We were about to open a bakery.

Menu written. Bakes tested and all that.

And then we didn’t.

It wasn’t dramatic… just the sudden realisation that it wasn’t right for Gina. Or for me.

But I’ve already done the work.

So instead of shelving it, I’m building the bakery we nearly opened - here. The recipes, the financial mapping of why it may have folded, the ones that would’ve paid the wages (and the ones I’m secretly glad I don’t have to make daily).

If we had opened… what would we have sold?
