Nodini are a type of taralli, a crunchy Apulian snack, similar in texture to breadsticks. If you’ve never heard of them, trust me — you need to make them.
Taralli are the first thing I ask for when I get back to Puglia. I usually ask my parents to get them, because they know the good forno.
They are crunchy and crumbly — except for nodini, which stay soft on the inside – and come in many different flavors. My favorite are fennel seeds, caramelized onions, or plain.
They’re irresistible — I miss them here in California, so I recreated them at home.
