Burmese Tofu (or Shan Tofu) is a popular dish from the Shan minority in Myanmar, made from finely milled chickpea flour, turmeric and water. Unlike traditional Chinese tofu, which involves curdling soy milk and pressing it into a firm block, Burmese tofu is made by gently heating the liquid until it coagulates, then letting it set into a soft, smooth block.
Once sliced, it’s often served in a flavourful Tohu Thoke salad with aromatic ingredients like lime leaves, tamarind juice, coriander, crispy garlic, shallots and roasted peanuts. Delicious!
