Some notes from the second edition of TGITE’s Where Are All The Women Restauranteurs, hosted by Panayiota Soutis at Toklas Bar last night:

• “I want to be a boss.” – Boutheina Ben Salem

• People are going to restaurants for providence and stories about ingredients. And often they don’t mind paying more for items when they trust the quality.

• “We need to be more audacious” – 💯 Pani!

• There was some real talk about what it takes to finance a restaurant – CrowdFunders and asking anyone you’ve ever met for smaller sums of cash are just a couple of ways.

• Nick Cave was spotted dining at Toklas.

• A lovely woman called Lydia stopped me to say she read my Substack and it actually made me well up – THANK YOU!

It was a gorgeous evening of nourishing and constructive conversations – enormous thanks to Pani for putting together such a wonderful panel. And the only good photo I took was of Jack ❤️
