If one trots the globe to the US South and one is not a vegetarian, one will inevitably sample bar-b-que from the region.

Southern BBQ is so distinctive that my son, who attends the University of Massachusetts Amherst (some 1,000 miles from true Southern BBQ) had BBQ shipped in dry ice from Tuscaloosa, Alabama, to Amherst so that he could host a dinner party and introduce his New England friends to the delights of Southern BBQ.

Southerners are fiercely loyal to one BBQ spot over another. In my town the rivalry is between Archibald's and Dreamland ("Tastes so good it makes your tongue want to slap your brains out"). Personally, I hold no strong allegiance, but I don't admit that to my BBQ-loving friends.

Can you smell Archibald's BBQ in the smoke emitting from its chimney? This photograph was taken early in the morning, before it opened. BBQ chefs have to start the process early to create succulent BBQ.
