99% of citric acid is derived from fermenting genetically modified black mold (Aspergillus Niger). It used to come from citric fruits but from the early 1900s it began to be derived from this toxic mold.

Pfizer states on its website that it pioneered the mass production of citric acid stating that this freed the company from relying on European citrus farmers. But at what expense?
