The meat sliced thin melts in your mouth and it’s paired with rice, sliced cucumbers, kimchi, a fried egg and then drizzled with my spicy sauce that many of you already know and love! ⁣ ⁣ SAVE this post, SHARE with friends, and FOLLOW me @kalejunkie for more easy recipes!⁣ ⁣ Makes 4 servings ⁣ BULGOGI MEAT⁣ 1/2 cup low sodium soy sauce ⁣ 1/3 cup packed coconut sugar⁣ 2 tb sesame oil ⁣ 2 tb chili garlic sauce⁣ 1/4 cup rice wine vinegar⁣ 2 cloves garlic, mashed⁣ 1 tb freshly grated ginger⁣ 1/2 tsp kosher salt⁣ 1 large shallot, sliced thin⁣ 2 1/4 lbs top sirloin steak, cut into 1/4 inch pieces⁣ 2 tb avocado oil⁣ ⁣ SPICY SAUCE⁣ 1 cup plain greek yogurt⁣ 1/4 cup sriracha⁣ 2 tb rice vinegar⁣ 1/4 cup low sodium soy sauce⁣ 2 tb honey⁣ 1 tsp fresh grated ginger⁣ 1/2 tsp crushed red pepper flakes⁣ ⁣ FOR THE BOWLS⁣ 3 cups cooked rice⁣ 4 fried eggs⁣ 1 cup homemade or store-bought kimchi ⁣ 1 English cucumber, cut into ribbons⁣ Optional: sesame seeds⁣ ⁣ Start by making the spicy sauce. In a blender, add the yogurt, vinegar, soy sauce, honey, sriracha, and red pepper flakes. Blend until creamy and smooth. Set that aside, and prepare the meat. Slice the steaks into thin pieces and place them in a large bowl. Pro tip: the meat will be much easier to slice thin when semi frozen, so I recommend freezing the meat for about 30 minutes beforehand. Next, make the marinade. In a bowl, whisk together the soy sauce, coconut sugar, sesame oil, chili garlic sauce, vinegar, garlic, ginger, and salt. Pour the marinade over the meat. Add the sliced shallots to the bowl. Toss together well, cover and let marinate for 30 minutes or up to 3 hours. Heat a large pan over high heat. Add the avocado oil. Once the pan is hot, add the beef in small batches, searing quickly on all sides, then removing from the pan and transferring to a plate. Once all the meat is cooked, assemble the bowls. Begin with rice, top with the beef, then a fried egg, sliced cucumber, and kimchi. Drizzle the spicy sauce on top and enjoy!ā£ā€
