This recipe takes the cake in terms of how easy it is to prep and how quickly it all comes together. Once it comes out of the oven, I take the juice at the bottom of the pan and pour it on top and wowwww. My kids love this chicken and if you are wondering what to serve it with, I serve it with jasmine rice and broccoli. To keep this even lower in carb, just leave the panko off all together and you are good to go! I’ve seen a few different versions of this floating around—mostly using mayo, but since I don’t like mayo, Greek yogurt it is and wow. Like I said, WINNER!
8 boneless, skinless chicken thighs
1/2 cup Greek yogurt
2/3 cup shredded cheddar cheese
2 cloves garlic, minced
2 tb ranch seasoning (I used Trader Joe’s, but use any brand you can find!)
1/3 cup panko breadcrumbs
Garnish: 1/4 cup parsley, chopped
Preheat oven to 400F. Pat chicken dry. Spray a baking tray lightly with cooking spray and lay the chicken down in an even layer. In a bowl, mix together the yogurt, cheddar, garlic and ranch seasoning until you get a thick paste. Spread it out evenly on top of the chicken. Add panko breadcrumbs on top. Bake for 40-45 minutes or until the chicken has reached an internal temp of 165F. At the 40 minute mark, I like to turn on the broiler and broil for the last few minutes to get a nice brown crunchy top. Remove from oven. Drain liquid from the bottom of the pan and pour over the top, if desired. ENJOY! #chickenrecipes #lowcarbrecipes #kidfriendlyrecipes”
