If you make smash tacos at home and the flip is stressing you out…make them on a sheet pan instead.
No flipping required. Everything bakes right side up. The breadcrumbs get perfectly golden and crispy from the oven heat and the edges of the tortillas get toasted without any of the pan-flipping anxiety.
I used Aleias certified gluten free Italian breadcrumbs and Mission corn tortillas labeled gluten free and the whole thing came out better than the pan fried version. Sheet pan was absolutely the move!
