Because I turned it into caesar salad smash tacos on a sheet pan and it was SO much better than a regular salad.
This is genuinely how I think about weeknight cooking. Take the thing you are already craving, figure out how to make it faster, easier, and gluten free, and put it on the table in 30 minutes. The craving is the starting point. The recipe is just the problem solving.
