I'd love to shout out Katie Webster, a local (Vermont) recipe developer who has done a ton of work with Eating Well in addition to writing her own cookbook with maple-based recipes, natch (healthyseasonalrecipes.…).
Her site is healthyseasonalrecipes.…. At 55 and as a lifelong SeLeCtIvE eAtEr with a kid who is one too and both who are vegetarian, AND after finalizing my divorce from someone who was a very good cook, I decided this year to stop being defensive and/or self-deprecating about my inability to cook and just learn how to do it for god's sake. Also: while I still had a very small window left with my kids at home, and to also show them that people can change big things about themselves, no matter how much they might've made it their entire personality.
As someone new to cooking I can confirm that Katie's site has super clear instructions and pics, and as the name would suggest, a ton of healthy or dietary-specific options (vegan, gluten-free, etc.) This also includes lots of fast weekday dinners, desserts, holiday-specific options, just a huge range.
