Two minutes away from our hotel was an unassuming turquoise entrance with the sign Evie’s. A no frills cafe where the server gave us the kind of warm welcome that turns the entire day around. I was ready for a full blown Aussie brekky and got exactly what I asked for. Let me preface by saying that I’m a texture girl, and there’s nothing I love more than getting all my taste profiles covered. The chili scram with a side of halloumi at Evie’s was heaven for my tastebuds. Sweet from the tomato relish, spicy from the chili, creamy eggs, tangy pickled cucumbers, crunchy fried onions, and the rubbery salty goodness of halloumi covered in honey. A hearty and satisfying breakfast that will live rent free in my mind.
