Oh yes roast two chickens then make broth out of the two carcasses every week if you can do it. Then you get a dinner, another dinner or two out do the leftover meat, and another couple of rice/gravy/risotto/soup options with the broth.
I often throw the carcass into a gallon freezer bag and toss it in the freezer if I can't quite manage the broth step. Then you can just take it out and do a big broth batch whenever you have time and focus.
But that’s for sure the way to better skin and hair and nails and health. And also you’re a step or two ahead for the rest of the week which can make or break meal planning.
This might be the third time I’ve posted about this, but I think Lane Scott’s suggestion of roasting two chickens if you’re already committed to roasting one is just…such a game changer. Every time I do this, I think what an obvious and therefore excellent idea this was.
