Ingredients

  • 250 g flour

  • 125 g soft butter (room temperature)

  • 100 g sugar

  • 1 egg yolk

  • Zest of one lemon

  • A pinch of salt

  • 1 teaspoon vanilla extract (optional)

Method — step by step

  1. Preheat the oven to 170°C (340°F).

  2. Mix the softened butter and sugar until creamy.

  3. Add the egg yolk, lemon zest, and vanilla. Mix well.

  4. Add the flour and salt. Knead until you get a smooth dough.

  5. Roll out the dough to about 5 mm thick. Cut into rounds using a glass or cookie cutter.

    → I made them a bit thicker so need longer cooking and consistency is nice but even nicer with you make them flat ;)

  6. Bake for 12–15 minutes, until lightly golden.

Let cool. Enjoy with a coffee or tea ☕

5 Roll out the dough to 5 mm thick. Cut into rounds using a glass.

—> I made them a bit thicker, so they require a longer cooking time; the texture is good, but they are even better when made thin ;)

6 Bake for 12 to 15 minutes until lightly golden.

7 Let cool. Enjoy with a coffee or tea. ☕
