Method â step by step
Preheat the oven to 170°C (340°F).
Mix the softened butter and sugar until creamy.
Add the egg yolk, lemon zest, and vanilla. Mix well.
Add the flour and salt. Knead until you get a smooth dough.
Roll out the dough to about 5 mm thick. Cut into rounds using a glass or cookie cutter.
â I made them a bit thicker so need longer cooking and consistency is nice but even nicer with you make them flat ;)
Bake for 12â15 minutes, until lightly golden.
Let cool. Enjoy with a coffee or tea â

125 g soft butter (room temperature)
100 g sugar
1 egg yolk
Zest of one lemon
A pinch of salt
1 teaspoon vanilla extract (optional)
Recipe â step by step:
1 Preheat the oven to 170°C.
2 Mix the softened butter and sugar until creamy.
3 Add the egg yolk, lemon zest, and vanilla. Mix well.
4 Incorporate the flour and salt. Knead until you get a smooth dough.
5 Roll out the dough to 5 mm thick. Cut into rounds using a glass.
â> I made them a bit thicker, so they require a longer cooking time; the texture is good, but they are even better when made thin ;)
6 Bake for 12 to 15 minutes until lightly golden.
7 Let cool. Enjoy with a coffee or tea. â
