It’s been a while since I’ve done any vinegars. This was a dry mulberry wine that wasn’t so great, so turned it into vinegar. Not-so-great wine makes not-so-great vinegar so this batch has been relegated to the garden. Also not a great idea keeping it in a jar with with the metal faucet, it was originally intended to be a continuous brew vinegar but got forgotten about with the surplus of other vinegars I’d made.
I keep the Mother Of Vinegar and use it to make other batches. Have been eyeing the wild bananas on our cliffside and meaning to steal a bunch before the monkeys and birds get it. The seeds inside the bananas make it too much trouble to eat but it makes a lovely vinegar. Have also been doing sweet coconut water vinegar from time to time also when I can be bothered to harvest some.
