Four of the greatest foods ever to exist — and all fermented foods. The result of humans learning to work with invisible microbes rather than trying to standardise and sterilise everything.
Learning how to transform basic ingredients and preserve food without the industrial system meddling and messing things up feels like sticking a middle finger up to The System that wants you dependent and buying.
This is one of the main reasons I love fermentation.
(I’m currently on day 4 of a 5 day fermentation retreat and it’s been great.)
