Bootstrap Kitchen — 003: 7-Hour Slow Cooked Herb Chicken
Built, not bought.
March 22, 2020. First Sunday of lockdown. World shut down, kitchen opened up. Whole chicken rubbed with sage, rosemary, and poultry seasoning, then slow cooked 7 hours with a whole poblano, rainbow potatoes, apples, lemon, onion, and a couple habaneros for good measure. Pulled it out fall-apart tender and plated it with charred broccolini. This was the meal that said: we’re going to be alright.
