Katrya is such an incredible baker. I love her recipes and bread so much. And you all know I don’t say that about many.

We haven’t had a chance to meet in person but become friends over our shared love for naturally leavened enriched doughs, fermentation, lamination, and Ukrainian cuisine.

Her patreon is full of recipes, and not just any recipes, but recipes that work and deliver stellar results, the flavors, textures, all of it. Her recipes appear in English and Ukrainian publications, magazines, cookbooks, etc. And in many ways her patreon is her cookbook which I hope one day can become a physical cookbook.

My amazing friend Katrya at the bakery in Lviv where she works with her friend Vasylyna - they always make incredible sourdough with local flour - this bread is wholegrain spelt and goes brilliantly with the kapusniak soup which Katrya made for lunch!
