Weekend request for a Chicken Pesto Pasta, which my children really enjoyed. A good easy simple meal with some broccoli snuck under the radar, so one I thought I would share.
Pasta of your choice with some broccoli thrown in for the last few minutes of cooking, then drain.
Leftover grilled chicken diced, few spoonfuls of fresh pesto, a splash of double cream, some pasta water and grated Parmesan to make a sauce.
Then add in the pasta and the broccoli and bring everything together in a pan.
Serve immediately in bowls with extra Parmesan.
