Oat Blueberry Muffin kind of morning! Recipe:
• 2 c gf-oats
• 2-3 ripe bananas
• 2 eggs
• ¼ c maple syrup
•1.5 tsp olive oil
• 1 tsp vanilla
• 2 tbspn ground flax
• 1 scoop vanilla whey protein powder
• 1 tsp baking powder + baking soda
• loads of cinnamon
• pinch of salt
Blend the oats into flour in a food processor, add the remaining ingredients and fold in blueberries at the end.
Bake at 400 degrees for five minutes to help the muffins rise and then 350 degrees for 12 minutes.
