It is a privilege to know and have cooked with you Jeremiah. You are a bona fide legend and a master at communicating how to cook. There is so much 'advice' out there now. This is wisdom. And while we are here ... your menus both at Chez Panisse and Stars were a road map out of the wilderness not only for me but for a legion of American chefs. Charlie and I said it to each other often. We are lucky to have you still sharing your brilliance.
