This is one of those deceptively simple dishes that lives or dies by technique. At face value it’s just steak and onions, but when done properly it becomes something far more layered and indulgent.

I’m using a beautifully marbled sirloin here - building the crust gradually with constant flipping, then finishing with butter basting and a proper rest. The pan sauce is where it all comes together - patiently reduced, carefully layered, and finished so it sits somewhere between an onion jam and a beef jus. Savoury, sweet, and seriously addictive.
